Spanish Style Prawns


Prawns- Marinade

Prawns cleaned and devained 6ea
1tbs bunch chopped cilantro
5 cloves crushed garlic
1 tablespoons crushed red pepper
6oz Olive oil

Combine all ingredients. Let marinate for at least 1 hour before cooking. Pour oil in to a pot and bring to a smoking point, slowly drop shrimp in and cook approximately 3min.

Ancho Sauce

Yield: 8oz

  • 3 dried ancho chili peppers
  • 2 tomatoes
  • 4 cloves garlic
  • ¼ cup bunch cilantro
  • ¼ White wine
  • ¼ cup oil

Cook peppers, tomatoes and garlic in a stock pot with white wine. Blend the pepper mixture with cilantro until smooth. Stream in oil. Season with salt and pepper.

Romesco Sauce

Yield: 10 oz

  • 4 roasted red peppers
  • ¼ cup lemon juice
  • ½ cup chicken stock
  • 1 oz sliced almonds
  • ¼ cup oil

Blend peppers, lemon juice, chicken stock and almonds, until smooth. Stream in oil. Season with salt and pepper.

Chimichurri Sauce

Yield: 8oz

  • 4 bunches cilantro (chopped)
  • 2 Tablespoons crushed red pepper
  • ½ cup Red wine Vinegar
  • 1 Tablespoon chopped Garlic
  • Salt & Pepper to Taste
  • ½ cup blended oil

Place cilantro, red pepper, vinegar and garlic in a blender and blend until smooth. Stream in oil. Season with salt and pepper.
