Local flavors such as Colorado-range bison, stream-fresh fish and locally-raised chicken and beef are prepared in traditional Spanish manner with lively sauces and spices and further enhanced with exotic flavors.

Special care is taken to select unique, indigenous ingredients whenever possible, such as quinoa, a delicate-tasting grain-like seed that grows only in Colorado and high in the Andes Mountains in South America.

A range of tempting appetizers is available, served in the popular Spanish tapas style, along with an entire cellar of vintages from Spain, Chile and around the world. Baca's signature sangria – made in the traditional roja or refreshing blanca – is also a perfect complement to any meal.
