- Award-Winning Former Restaurateur Brings Innovation, Flair to Hotel's Menu -
(Englewood, CO) - The Inverness Hotel and Conference Center named Peter St. John, A Denver-area culinary luminary as its new executive chef.
St. John, who most recently was executive chef for Westin Tabor Center in Denver, will oversee all cuisine at The Inverness, including the development of menus at five eateries, banquet dining, in-room service and meals at The Inverness' 60,000 square feet of conference space.
"Peter's culinary creativity and flair will enhance the overall guest experience," said Mark Secker, director of food and beverage at The Inverness. "He has expertise in a wide range of styles, from Continental to Southwest. We're extremely excited to have Peter with us."
St. John said the allure of working with multiple restaurants and large conference and banquet facilities is what drew him to The Inverness and plans to implement several fresh ideas to the hotel's fare. He will initially be rewriting the menus for the Garden Terrace and The Pub, as well as in-room and poolside dining to include lighter offerings, such as more salads and sandwiches.
"It's more reflective of people's lifestyles," St. John said. "We're going to have healthier items and more vegetarian options as well." He plans to add more cook to order, or "action stations" to banquet buffets and will implement a rotating menu at Baca to include more seasonality of ingredients.
A winner of multiple awards and competitions, the German-born St. John is former owner of O Sole Mio Ristorante and Tango in Denver and has held executive chef positions at The Inn and Spa at Loretto in Santa Fe, N.M., The Kansas City Club in Kansas City, MO. and the Kansas City Ritz Carlton. He is certified by the American Culinary Association as an executive chef and has worked in kitchens all over the world, including Germany, Morocco, Antigua and the Bahamas.
