Baca Presents Contemporary Colorado Cuisine with a Spanish Flair

(Englewood, CO.) - Baca, the new dining experience at The Inverness Hotel and Conference Center, opened June 6, combining contemporary Colorado cuisine with a nod to the state's rich Spanish-inspired culinary heritage.

For the soft opening, Chef Hamilton Cowie assembled an inspired and innovative bill of fare that captures the essence of the Rocky Mountains with fresh wild game, stream-caught fish, range-raised buffalo and succulent Colorado beef.

"With Baca, we're going beyond the ubiquitous buffalo steak and labeling it Colorado cuisine," said Cowie. "We're exploring new interpretations of local flavors and delving into the history and origins of those tastes.  Each dish has depth and meaning to it."

The High Plains Bison Rib Eye ($22) is wood fired in a traditional Spanish style, using Rocky Mountain native Woods for flavor and is served with a sweet potato pancake, chile-dusted onions, baby beans and roasted shallot demi-glace, while the Colorado Mixed Grill ($20) features coffee-rubbed lamb sirloin, rabbit sausage, grilled quail, potato omelet, fava beans with a red onion marmalade.  The Mustard Glazed Grilled Salmon ($18) is prepared with a smoked chile vinaigrette and served with roasted garlic mashed potatoes.

Other entrées on the rotating menu include Mesquite Grilled Ranch Steak, cut form Colorado-raised beef, with house-cut thin fries and chimichurri, baby beans with shallots ($19), Roasted Red Bird Farms Chicken - from Littleton, Colo. - with serrano-wrapped asparagus and Manchego risotto in a parsley-leek sauce ($15), Sweet Potato and Pine Nut Ravioli in a smoked tomato-cumin sauce, with red chard and oyster mushrooms ($12),

Grilled Bone-In Pork Chop with green chile grits in harissa, seared zucchini and oven-dried tomatoes ($16) and Corn Flour Crusted Black Cod with tomatoes and pine nuts, saffron new potatoes and garlic spinach ($18)

Baca's dishes were planned to perfectly complement one of the restaurant's signature sangrias, crafted by sommelier restaurant manager Dave Wickman.  In addition, a selection of fine vintages from Spain, Chile and around the world is available from Baca's wine list for $22.  The menu is rounded out by a selection of appetizers that are also available at The Inverness' Fireside Lounge, served tapas style.

Formerly known as The Swan,  The Inverness' signature restaurant features a completely redesigned décor, an expanded dining area with 31 tables and a separate space, which can accommodate private parties of up to 25.

Baca is a place for relaxed, upscale dining, where drink and conversation are part of the experience. The attentive, knowledgeable staff is experienced and prepared to explain the inspiration behind the dishes or help select the right wine to complete a meal.

The Baca name was inspired by one of Colorado's most prominent pioneering families, which embodies the spirit of the new restaurant, according to George Fischer, general manager of The Inverness Hotel and Conference Center. "The Bacas are an integral part of Colorado's history and lore," Fischer said. "They were proud of their Spanish heritage and maintained an air of Castilian sophistication, even in the pioneering days of the 1800s."

The Bacas established themselves as traders and ranchers along the storied Santa Fe Trail.  The family's patriarch, Felipe, helped found the town of Trinidad in the southeastern corner of the state and was recognized as one of the 50 most influential Coloradoans of all time in 1999.
