(ENGLEWOOD, Colo.) ? The Swan, offering fine Colorado dining in a comfortable and elegant bistro setting at The Inverness Hotel and Conference Center, recently introduced a delectable new menu, available through September.
Many of the items on the menu were previewed by AAA staff earlier in the year and contributed to The Swan?s coveted Four Diamond rating.
Head Chef Hamilton Cowie has introduced several new entrees he says are ?full of surprises? yet maintain The Swan?s signature eclectic New American regional cuisine. One example is the Grilled Buffalo, a strip loin served with yuca fries, braised chard and tamarind sauce.
?I think this is my favorite entr?e,? Chef Cowie said. ?It?s a classic American cut of beef, but with the twist that it?s not truly beef ? it?s buffalo. And the braised chard is a vegetable that acts as a versatile background that stands up to the other big flavors in the dish.?
Other additions include Maine Lobster Napoleon, Prime Filet Mignon with Garlic Prawns and Polenta Souffl?.
In addition to new entrees, the wine list has been expanded to include wines from South Africa and Australia.
Tableside preparation of classic dishes including Chateaubriand, Caesar salad, specialty desserts and premium martinis is a signature service at The Swan. The dining room is open 6 to 10 p.m., Tuesday through Saturday. Reservations are recommended by calling (303) 799-5800.
