As executive chef for The Inverness Hotel and Conference Center, Brett Peterson oversees all culinary functions for The Inverness, including five restaurants ? The Swan (only one of 20 AAA Four Diamond restaurants in Colorado), The Garden Terrace, The Fireside Lounge, The Pub and The Golf Grille ? as well as menu planning, staff training and budget monitoring for food cost and labor allocations. A member of The Inverness? culinary team for the past three years, Peterson started as a chef de cuisine and quickly rose through the ranks to Assistant Pastry Chef, Executive Sous chef and finally Executive Chef in early 2003.
Prior to joining The Inverness? culinary team, Peterson worked in the kitchen of several private clubs, including the Denver Country Club, Castle Pines Golf Club in Castle Rock, Colo., and most recently, Quail Run Country Club in Santa Fe, N.M. The small, intimate settings of these establishments enabled Peterson to develop relationships with the patrons, prompting a high level of personally tailored service ? something he champions at The Inverness.
It was the reputation and engaging atmosphere of The Swan and Garden Terrace that drew Peterson in to The Inverness in 1999. And Peterson is proud to work as executive chef for a hotel and conference center known for its top-notch food and service. ?The Inverness? wait staff is the best I?ve ever worked with,? he said.
One of Peterson?s goals is to further The Swan?s reputation as being a must-do dining experience that spans beyond the special occasion dinner. ?A fine dining experience does not need to be exclusive or expensive,? said Peterson. ?We want local residents and guests to understand the art of fine food and the value that The Inverness? dining experiences affords them, whether it?s at The Swan, Garden Terrace or for a special event or meeting,? he added.
Peterson is a classically trained chef with a culinary degree from Western Culinary Institute. An avid skier, mountain biker and hiker, he divides his free time between Denver and Taos, N.M., where he visits once a month.
